Mexican cuisine is one of the few cuisines in the world recognized by UNESCO as an Intangible Cultural Heritage of Humanity (2010). This distinction highlights its ancestral richness, its native ingredients, and the traditional techniques passed down from generation to generation.

The pillars of the cuisine are corn (the base for tortillas, tamales, and pozole), chili peppers (with more than 50 varieties that add flavor and heat), and beans. The cuisine is characterized by its great regional diversity; from the complex mole of Oaxaca and Puebla, to the cochinita pibil of Yucatán, to the seafood of the coasts.

Mexican restaurants (including simple, authentic taquerias) are places of celebration where bold and colorful flavors merge. The taco is its ultimate global expression, combining a corn tortilla with various stews, fresh salsa, and a touch of lime. Mexican food is a cultural experience that celebrates color, family, and intense flavor, often balancing spice with the freshness of herbs like cilantro and avocado.
